1 tablespoon curry powder (Garam Masala)
    4 medium sized tomato, diced
    1 Bell pepper

1 teaspoon salt (or according to your taste)
    1/4 bunch cilantro, finely chopped

Directions
•    Preheat oven to 350 degrees F.

•    Add cumin seeds wait till the cumin seeds start crackling.
•     Add onion and ginger garlic paste stir till it turns golden brown.
•    Add chopped tomatoes and cook till the tomatoes starts oozing out water ( Add a little water if the tomatoes are not juicy).
•    Add chopped bell pepper stir till it gets cooked.
•    Now add the baked eggplant mix well.
•    Add garam masala, chilli powder and salt mix well.
•    Allow the mixture to get cooked for 2-3 minutes then add yogurt and mix well.
•    Leave the eggplant curry in low heat for few minutes.
•    Add finely chopped cilantro for garnish mix well and serve hot.

Tip
You can eat the eggplant curry along with – Indian Roti, Indian Naan bread, Tortilla, Bread, Burger buns or Rice.

IDLY MANCHURIAN

Thanks to all my friends and family members who kept on asking me the recipes of the dishes I have posted on FB you guys motivated me to create this blog. I hate writing but I am going to do this so that every time I see my blog I will get motivated to cook more variety dishes I hope :)

I decided to start my recipe blogging with Idly Manchurian. The reason I chose this dish first is because Idly is considered to be one of the boring dishes and imagine eating the left over idly`s that is like a nightmare.I know most of us modify the left over Idly`s into Idly Upma or Idly fry but that is usual I wanted to try something different that is how I landed up inventing this dish.

Ingredients for Frying Idly`s :

Left over Idly`s  (Do not use fresh hot idly`s at least keep it for couple of hours and then use it)
1 cup Besan/ kadala maavu

1/2 cup Rice Flour
Red Chilly powder (According to taste)
Salt to taste (According to taste)

1 cup finely Chopped Spring Onions (optional)
Chopped green chili
Finely Chopped Ginger
1 tbsp Ginger Garlic paste
Chopped Capsicum/ Bell pepper (optional)
Soya Sauce
Chilly Sauce
Tomato Ketchup
 Finely Chopped Coriander Leaves

Method for Frying

  • Cut Idly into small square shaped pieces
  • Make a paste by mixing besan, corn flour, rice flour, salt and red chilly powder
  • Heat oil in a pan and bring it to Boiling
  • Dip the cut Idly`s in the Batter and deep fry it and keep it aside.

Preparation of Idly Manchurian:

  • Heat little oil in a fresh pan
  • Add onion, spring onion, ginger garlic paste, green chilly and finely chopped ginger and stir till the onion turns golden brown
  • Add capsicum/Bell pepper and mix for few minutes (This step is optional I and vinod love capsicum so I add it )

  • Add soya sauce, tomato sauce, chilly sauce and some salt mix the contents well
  • Finely add some chopped coriander/Cilantro for garnishing
  •  Serve hot with a big smile and lot of love :)

Please Note:
To make Gobi/Cauliflower Manchurian you can use the same method but swap idly with Gobi

You can eat Idly Manchurian as a starter or eat it along with fried rice or chapati`s.
