EGGPLANT CURRY

 Hi All,

It has been a very long time since I posted on my blog.I have had a lot of recipe request will post them all soon.

Last week we had a potluck party in Walnut park Charlottesville.My friends from US said they all love Eggplant and wanted to try some Indian dish that has eggplant. So I decided to make Eggplant curry and guess what every one loved it.So here is the recipe for it.Try it out and let me know if you enjoyed it.

EGGPLANT CURRY:

Ingredients
    1 large eggplant
    2 tablespoons Butter
    1 teaspoon cumin seeds
    1 medium sized onion, thinly sliced
    1 tablespoon ginger garlic paste (Optional)
    1 tablespoon curry powder (Garam Masala)
    4 medium sized tomato, diced
    1 Bell pepper
    1/2 cup plain yogurt
    1 teaspoon red chilli powder (or as per your taste – if u like Indian spice level add more)
    1 teaspoon salt (or according to your taste)
    1/4 bunch cilantro, finely chopped

Directions
•    Preheat oven to 350 degrees F.
•    Chop the eggplant and place it on a baking sheet. Bake in pre heated oven for 20 - 30 minutes until tender. Remove from heat, cool and peel the skin and keep it aside (last time I did not peel the skin because the skin has lot of nutrients).
•    Heat Butter in a pan over medium heat.
•    Add cumin seeds wait till the cumin seeds start crackling.
•     Add onion and ginger garlic paste stir till it turns golden brown.
•    Add chopped tomatoes and cook till the tomatoes starts oozing out water ( Add a little water if the tomatoes are not juicy).
•    Add chopped bell pepper stir till it gets cooked.
•    Now add the baked eggplant mix well.
•    Add garam masala, chilli powder and salt mix well.
•    Allow the mixture to get cooked for 2-3 minutes then add yogurt and mix well.
•    Leave the eggplant curry in low heat for few minutes.
•    Add finely chopped cilantro for garnish mix well and serve hot.

Tip
You can eat the eggplant curry along with – Indian Roti, Indian Naan bread, Tortilla, Bread, Burger buns or Rice.
